Increasing enzyme availability and stability may be addressed through enzyme 34 immobilization. Avian eggshells membranes are good candidates as a matrix for 35 immobilization procedures. Remarkably, the absence of cells renders avian 36 eggshells membranes a very stable material. In the case of chicken eggshell, 37 this material is available from the poultry industry as a byproduct, and it is a 38 very safe raw material. Previously, pieces of eggshell membrane, or even 39 particles from whole eggshell, have been used for these purposes. We report 40 here the use of eggshell membrane powder for E. coli -galactosidase 41 immobilization with glutaraldehyde as cross-linker. A kinetic characterization is 42 provided for eggshell membrane powder-bound enzyme compared to free 43 enzyme. Results show a remarkable similarity between bound and free enzyme 44 and also that the immobilized enzyme is stable and can be reused several 45 times. Moreover, bound enzyme was able to produce glucose from skim milk 46 serum. 47 48 Keywords 49 Eggshell membrane powder; enzyme immobilization; -50 galactosidasees_CL
